Ingredients for 2 servings:
- 250 g minced beef
- 1 large onion(s), red
- ½ tbsp olive oil
- ½ tbsp butter
- 1 stalk(s) leek
- 3 tbsp tomato puree
- 1 tbsp beef bouillon
- ½ tbsp mustard, medium hot
- ½ tsp sweet paprika powder
- ½ tsp salt
- 50 g cashew nuts
- 500 ml water
- 100 g pasta shells
- e.g. Parmesan, grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
with minced beef, leek and cashew nuts
Chop the onion and sauté briefly in oil and butter in a large pan. Then increase the heat, add the minced meat to the pan and stir with a large wooden fork until the meat is browned. Remove the minced meat from the pan and roast the cashews in it without adding any oil. Grind the roasted cashews in a food processor. Wash and cut the leek into thin strips. Mix together the tomato puree, stock, mustard, and seasoning. Return the minced meat to the pan and add the leek. Sprinkle the ground cashews over it and stir in. Pour the seasoning mix over it and mix everything together. Add 500 ml water and the dry pasta. Simmer gently until everything is cooked and the pasta has almost completely absorbed the liquid, stirring frequently. Garnish the One Pot Pasta with grated Parmesan cheese and serve.
