Ingredients for 2 servings:

  • 250 g pasta
  • 1 can tomatoes, chopped, approx. 400 g
  • ½ onion(s)
  • 3 tbsp tomato paste
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • salt and pepper
  • Herbs, Italian
  • Basil, fresh

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Finely dice the onion and add it to a saucepan with the tomato paste, oil, balsamic vinegar, and chopped tomatoes. Fill the empty tomato can 1 1/2 times full with water and add this to the pan. Mix everything well and season with salt, pepper, Italian herbs, and fresh basil. Feel free to use a little more salt than you would for a regular sauce, as the pasta will be cooked in the saucepan. Add the pasta to the mixed sauce and cook for about 15-20 minutes, until the sauce has thickened sufficiently and the pasta is al dente. This dish can, of course, be varied as desired, for example by adding fresh vegetables (zucchini, corn, tomatoes, eggplant, etc.), mozzarella, or feta.
