One-pot pasta with bacon and spinach

Ingredients for 4 servings:

  • 150 g bacon, diced
  • 1 garlic clove(s), finely chopped
  • some oil for frying
  • 2 cup(s) baby spinach, washed
  • 4 cup(s) milk, more if needed
  • 400 g pasta, small (penne, fusilli etc.)
  • ½ tsp salt, approx.
  • n. B. Pfeffer
  • ½ chili pepper(s), pitted, finely diced
  • 50 g Parmesan, freshly grated, alternatively mild Gouda
  • 50 g pine nuts, roasted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

quick and delicious pasta dish without much washing up

First: Use a 200-250 ml cup. Fry the bacon cubes and garlic in a little oil. Add the washed spinach and let it wilt. Stir in 4 cups of milk and bring everything to a boil briefly. Then stir in the pasta, salt (about 1/2 tsp), and pepper, and cook with the lid closed for about 10 minutes (depending on the pasta). Stir several times and check that there is still enough liquid. If not, add a little more milk. The pasta should be tender after this time, and the sauce should have a slightly creamy consistency. Stir in Parmesan or another milder cheese and let it melt. Season again, adding a little more milk if the consistency isn’t quite right. Stir everything well. Serve in a deep dish sprinkled with toasted pine nuts.
