One Pot Pasta with Minced Meat, Carrots, Tomatoes

Ingredients for 4 servings:

  • 400 g minced beef
  • 1 tbsp oil
  • 2 m.-sized onion(s)
  • 2 carrots (approx. 200 g)
  • 1 tbsp tomato paste
  • 500 ml vegetable broth, instant
  • 250 g pasta, small (e.g. fork spaghetti)
  • 500 g tomatoes, pureed
  • herbal salt
  • Black pepper, freshly ground
  • Paprika powder, sweet
  • some Parmesan, freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Heat oil in a pan and fry the minced meat over high heat until crumbly. Season with pepper and salt. Clean the vegetables, finely dice the onions and dice the carrots slightly larger. Add the onions to the minced meat and fry. Add the carrots and sauté briefly. Stir in the tomato paste and deglaze with the stock. Reduce the heat to medium, cover the pan, and simmer for 10 minutes. Add the passata, pasta, and paprika and mix well. The pasta should be covered with liquid. Replace the lid and simmer for 8 minutes. Season to taste. Garnish with freshly grated Parmesan cheese to serve.
