One-pot Pasta with Mushrooms

The perfect one-pot pasta with mushrooms recipe with a picture and simple step-by-step instructions.

  • 300 g Spelled Spaghetti
  • 250 g Mushrooms brown
  • 1 Onion
  • 2 Garlic cloves
  • 1 bunch Fresh smooth parsley
  • 3 tbsp Tomato paste
  • 3 tsp Pesto Arrabiata, vegan from DM e.g.
  • 4 Spring onions
  • 750 ml Vegetable broth
  • 1 tbsp Olive oil
  • 5 Dried tomatoes in oil
  1. Break the spaghetti in half and place in a deep saucepan.
  1. Quarter the mushrooms. Roughly chop the onion. Cut the garlic into thin slices. Chop the parsley. Cut the spring onions into rings. Cut the sun-dried tomatoes in oil into fine strips.
  1. Mix the olive oil, tomato paste, pesto and vegetable stock.
  1. Place vegetables on top of the spaghetti. Pour the stock over. Bring to the boil, stir and simmer with the lid closed over medium heat for approx. 20-30 minutes. Stir every now and then. The pasta is ready when the sauce is almost completely absorbed.
