One-pot pasta with zucchini

Ingredients for 4 servings:

  • 2 small zucchini
  • 1 stalk(s) leek
  • 300 g pasta (wholemeal spelt spirali)
  • 600 ml vegetable stock
  • 200 ml spelt milk (spelt drink)
  • 2 tbsp coconut cream
  • 3 tsp curry

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Pasta and vegetables from one pot, vegan

Chop the vegetables. Combine all ingredients, except the zucchini, in a saucepan and bring to a boil. Cover and simmer over medium heat for about 20-25 minutes. After about 10-15 minutes, add the zucchini. Stir occasionally.
