Onion and bacon crêpes

Ingredients for 4 servings:

  • 120 g flour
  • 2 eggs
  • 125 ml milk
  • 125 g cream
  • 100 ml mineral water
  • Salt
  • 1 tsp marjoram, dried
  • 400 g onion(s)
  • 150 g ham or bacon, lean, diced
  • 1 tbsp oil
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

For the crêpes, combine flour, eggs, milk, cream, mineral water, marjoram, and a pinch of salt and let stand briefly. Peel, halve, and slice the onions. Heat oil in a pan and fry the ham and onions until quite soft. Season with salt and pepper and keep warm. Bake 4 pancakes from the batter. Fill them with the onion and bacon mixture, roll them up, and serve immediately.
