Ingredients for 5 servings:

  • 300 g flour (chickpea flour)
  • ½ tsp baking powder
  • 1 tsp turmeric
  • 1 tsp coriander, ground
  • ½ tsp ground cumin or garam masala
  • ½ tsp salt
  • Chili powder, flakes or crushed dried pods to taste
  • 5 tbsp oil
  • Water
  • Oil for frying, about 750 ml
  • 400 g onion(s), peeled, cut into fine rings
  • 400 g yogurt
  • 150 g sour cream
  • ½ bunch parsley, fresh (if you like, use fresh coriander or mint)

Onion rings with Indian spices baked in chickpea batter

Mix flour, baking powder, spices, salt, 5 tablespoons of oil, and 1 cup of water into a batter. Add enough water to form a thick batter that sticks to the onion rings. Add the onion rings to the batter and mix. Using a tablespoon, drop the onion rings into hot oil (preferably in a deep pan) and fry until golden brown. Drain on kitchen paper. Serve. A yogurt dip goes well with this dish. Mix 400g yogurt with 150g sour cream. Add salt, turmeric, chili, and half a bunch of chopped flat-leaf parsley (alternatively: fresh coriander or mint). Onion bhajis are a great appetizer, snack, and are often taken away for a quick lunch or dinner. If other vegetables are fried in this batter, the recipe is called “pakoras.” Potato slices are traditionally used. Gram flour is gluten-free. If you omit the dip, the recipe is suitable for a vegan diet.
