Ingredients for 4 servings:

  • 500 g onion(s), red Italian
  • 2 tbsp olive oil
  • 1 chili pepper(s), dried
  • 1 tsp brown sugar
  • 2 tsp spice mix of: coriander, allspice, black pepper ground or ground
  • 1 carnation(s)
  • 2 bay leaves
  • 1 cm ginger, grated
  • 40 g raisins
  • 1 tbsp almonds, sliced
  • 1 tbsp apricot jam
  • ⅛ liter white wine

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them thinly. Briefly roast the dried chilies in olive oil, add the onions, and sauté gently over low heat until soft. Caramelize with the sugar, then season with salt and spices. Stir in the raisins, flaked almonds, and apricot jam. When the onions are completely soft, gradually add the wine and simmer until reduced.
