Pork fillet in curry mustard sauce

Ingredients for 4 servings:

  • 1 pork fillet(s), fresh, whole
  • 1 gr. can/n peach(s), in wedges
  • 400 ml whipped cream
  • 2 tbsp mustard, hot
  • 2 tsp curry powder
  • salt and pepper
  • 250 g cheese (Gouda), grated
  • possibly chili powder
  • Fat for the dish and for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the fillet and cut into finger-thick slices. Heat the drippings in a pan and sear the fillet slices briefly but vigorously on both sides. Remove the meat slices and place them in a greased casserole dish. Drain the canned peaches and reserve the juice. Arrange the peach slices on top of the fillet. For the sauce, pour the cream into the pan with the drippings and heat it up. Now add mustard, curry, and perhaps a little peach juice, as well as other spices, to taste. Pour the finished sauce over the meat and sprinkle with the Gouda cheese. Bake the whole thing in a preheated oven at 200 degrees Celsius (convection oven) for about 45-60 minutes, until the cheese has melted and is a delicious brown.
