Onion gratin with ham and arugula

Ingredients for 4 servings:

  • 800 g onion(s)
  • 2 tomatoes
  • 1 bunch arugula
  • 1 bunch of parsley
  • 150 g ham, cooked
  • salt and pepper
  • 1 pinch of chili powder
  • 125 ml vegetable stock
  • 125 g cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onions and cut into approximately 1/2 cm thick slices. Place them in an ovenproof dish and spread them out. Preheat the oven to 180°C. Wash the tomatoes and cut them into very small cubes. Sort the arugula and parsley, wash them, and shake them dry. Remove any thick stems and chop them finely. Finely dice the ham, leaving no fat on the edge. Mix the tomatoes, herbs, and ham and season with salt, pepper, and chili powder. Spread the mixture over the onions. Mix the vegetable stock with the cream and pour evenly over the ingredients in the dish. Bake the gratin on the middle rack for approximately 50 minutes, until the onions are soft. Serve warm. Accompany with boiled potatoes or bread, and perhaps pork or lamb chops.
