Ingredients for 4 servings:

  • 1 ¼ kg onion(s), cut into thin rings
  • 3 tbsp salt
  • 1 kg gelling sugar
  • ½ liter vinegar (white wine vinegar)
  • 1 ½ tsp cloves in a gauze bag
  • 2 tsp caraway seeds

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

delicious with cheese

Mix the onion with the salt and let stand for 1 hour. Rinse and pat dry. Bring the sugar, vinegar, and clove sachet to a boil and simmer gently for 5 minutes. Add the onions and caraway seeds, bring to a boil, and skim off the foam. Simmer over very low heat for 2 to 2.5 hours, until the syrup thickens and the onions are translucent and golden brown. Remove from the heat and let stand for a few minutes. Pour into jars.
