Ingredients
 

  • 1 kg Red onions
  • 70 g Ginger
  • 100 ml Maple syrup
  • 1 tsp Freshly grated nutmeg
  • 300 ml Red wine
  • 100 ml Water
  • 3 Bay leaves
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 50 ml Balsamic vinegar
  • Pepper salt

Instructions
 

  • Roughly dice the onions. Peel the ginger and cut into thin strips. Heat the oil and butter in a wide, shallow saucepan, sauté the onions for 8-10 minutes until translucent.
  • Add ginger, nutmeg, bay leaf and maple syrup and let it caramelize slightly. Deglaze with wine and vinegar, add 100 ml of water, cook uncovered for 45 minutes over a mild heat, stirring occasionally. Season heartily with salt and pepper.
  • Goes well with cheese and cold roasts
