Ingredients
- 1 kg Red onions
- 70 g Ginger
- 100 ml Maple syrup
- 1 tsp Freshly grated nutmeg
- 300 ml Red wine
- 100 ml Water
- 3 Bay leaves
- 2 tbsp Butter
- 2 tbsp Olive oil
- 50 ml Balsamic vinegar
- Pepper salt
Instructions
- Roughly dice the onions. Peel the ginger and cut into thin strips. Heat the oil and butter in a wide, shallow saucepan, sauté the onions for 8-10 minutes until translucent.
- Add ginger, nutmeg, bay leaf and maple syrup and let it caramelize slightly. Deglaze with wine and vinegar, add 100 ml of water, cook uncovered for 45 minutes over a mild heat, stirring occasionally. Season heartily with salt and pepper.
- Goes well with cheese and cold roasts
