Onion pancakes

Ingredients for 4 servings:

  • 2 onions
  • 200 g flour
  • 3 egg yolks
  • 250 ml milk
  • Salt
  • pepper
  • Paprika powder
  • 3 egg whites
  • ½ bunch of spring onions or chives
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

with herbal cream

Thinly slice the onions and sauté in a little oil until translucent. Let cool on kitchen paper. For the pancake batter, mix the flour, egg yolk, and room-temperature milk. Season with salt, pepper, and paprika. Finally, whisk in the beaten egg whites and let the batter rest for at least 1 hour. Before frying, slice the spring onions (or chives) into rings and add them to the batter along with the cooled onion rings. The batter should be a little thicker than usual. Fry the pancakes one after the other in a pan in oil/butter until golden brown. … and serve with a herb cream.
