Onion roast pork à la Gabi

Ingredients for 4 servings:

  • 1 ¼ kg roast pork (boneless back)
  • Salt and pepper, black from the mill
  • oil
  • 500 g onion(s), roughly chopped
  • 2 porcini mushrooms, dried
  • 375 ml water, hot
  • Flour or cornstarch to thicken

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Salt the pork roast on all sides. Brown it all over in hot oil in a roasting pan, remove it from the pan, and season with pepper. Brown the onions well in the remaining fat. Return the roast to the roasting pan, pour in the water, season with salt, and add the porcini mushroom pieces. Cook in a preheated oven at 180°C for about 90 minutes. Then remove the roast and keep warm. Thicken the sauce with flour or cornstarch and season with salt and pepper.
