Ingredients for 2 servings:
- 1 ½ onions, 150 g
- 2 tbsp Clarified butter, 20 g
- 1 tbsp flour, 10 g
- 250 ml vegetable stock
- 1 tsp tomato paste
- 1 tsp soy sauce
- 1 tbsp dry red wine
- 1 dashes lemon juice
- ½ tsp coriander powder
- Salt and pepper, from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Fake sauce, goes well with fried meatballs or bratwurst
Peel, halve, and dice the onions. Heat the clarified butter in a roasting pan and fry the onions until tender, stirring constantly. Set the pan aside, sprinkle the flour over the onions, and stir with a wooden spoon. Return the pan to the stovetop and brown until light brown, stirring constantly. Set the pan aside again, deglaze with the stock, and bring to a boil thoroughly. Add the soy sauce, tomato paste, ground coriander, and red wine to the sauce. Cover the onion sauce and simmer gently for about 10 minutes. Season to taste with salt, pepper, and lemon juice. If the onion sauce has become too thick, thin with a little water. Goes well with fried meatballs, bratwurst, or a slice of meatloaf, as well as with any briefly fried cuts of meat such as chops, steaks, etc. Also good with mashed potatoes, boiled potatoes, and noodles.
