Onion-tomato wholegrain rice with pine nuts

Ingredients for 2 servings:

  • 1 cup parboiled whole grain rice, approx. 120 g
  • 2 onions, red
  • 4 tomatoes, dried
  • 1 tomato(s)
  • 6 tbsp pine nuts
  • salt and pepper
  • 1 tbsp rapeseed oil or safflower oil
  • 1 clove(s) garlic
  • 400 ml water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and finely dice the onion and garlic. Finely dice both tomatoes. Sauté these three ingredients in oil. Add the rice and pine nuts. Deglaze with water and season with salt and pepper. Bring to a boil and cook for 15 minutes, or according to the package instructions. The rice can be used as a side dish with meat dishes or stir-fried vegetables. It also tastes good with mushroom sauce. For this recipe, I use parboiled whole-grain rice with a cooking time of 15 minutes.
