Ingredients for 4 servings:
- 2 kg onion(s), very small
- 4 tbsp sugar, brown (raw sugar)
- 6 garlic cloves
- 4 red chili peppers, e.g. Bird Eyes
- 8 tbsp Balsamic vinegar, dark
- 8 tbsp white wine vinegar
- 3 tbsp fish sauce
- 3 tbsp soy sauce
- 1 liter of water
- e.g. olive oil for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
Peel the onions and garlic and fry them in a deep pan with oil. Then combine all ingredients in a saucepan and bring to a boil. Cover and simmer over low heat for 25 minutes, then uncover the pan and reduce the contents to a syrupy consistency over medium heat. While the onions are still hot, pour them into jars. They can be eaten cold or warm.
