Ingredients for 1 servings:

  • 500 g flour (wholemeal flour)
  • 250 g butter
  • 250 g ground almonds
  • 500 g brown sugar
  • 4 egg yolks
  • 1 tsp cardamom, ground
  • 1 lemon(s), untreated, zest
  • 4 tbsp rum
  • 2 orange(s), the juice
  • 4 tbsp cinnamon

according to the recipe of some Hamburg women from 1798

The original recipe from 1798 reads: Take a pound of flour, half a pound of butter, half a pound of almonds, half a pound of sugar, the yolks of four eggs, cardamom, grated lemon peel, and two spoonfuls of rum. Wash the butter well, stir it into a salve, add the eggs and sugar, as well as the flour and almonds, and rub it thoroughly until stiff. Roll it out, cut it into whatever shape you like with a hot knife, brush it with orange juice, sprinkle it with cinnamon and sugar, and bake it slowly until tender. The quantities: One Hamburg pound from 1798 corresponds to 551.23 grams. A spoonful should be at least a tablespoon, preferably larger. Preparation by a Hamburg woman in 2007: Lightly toast the ground almonds in a pan without fat. Cream the butter until fluffy, then knead with the egg yolk, 250g sugar, flour, almonds, and lemon zest. Add about 4 tablespoons of rum to make the dough easier to work with. Shape the dough into individual logs and cut off small pieces (not too thin, as the dough will be very crumbly). Mix the remaining 250g sugar with the cinnamon. Dip each log in orange juice, roll in cinnamon sugar, and carefully press each log onto a baking sheet lined with baking paper or aluminum foil. Bake at 150°C (convection oven) for about 20 minutes, until the sugar has melted and the cookies are golden brown. Makes about 150 cookies. Caution: The cookies will be very soft after baking. They will harden again when cooled. Be sure to use baking paper or aluminum foil, otherwise the cookies will stick to the baking sheet.
