Orange cheesecake

Ingredients for 1 servings:

  • 100 g butter, soft
  • 125 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 1 tbsp lemon zest, grated
  • 1 pinch of salt
  • 500 g low-fat curd cheese
  • 150 g cream
  • 70 g flour
  • 1 orange(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quick and without a base – for a small baking tray (20 cm x 30 cm)

Grease the baking tray, line it with baking paper and preheat the oven to 200°C (180°C fan-assisted). Mix the butter and sugar with a hand mixer or in a food processor on the lowest speed. Add the eggs, vanilla sugar, lemon zest and salt and beat everything until fluffy. Add the quark, cream and flour one after the other and continue beating well. Pour the mixture into the dish and smooth it out. Quarter and peel the orange, cut it into small pieces, spread it on the quark mixture and press down lightly. Carefully place the cake in the oven and bake in the middle of the oven for 25 – 35 minutes. Turn off the oven and let the cake bake for a further 5 – 10 minutes. Tip: Other fruits are of course also suitable as toppings, such as cherries, mangoes, pears, apricots or pineapple.
