Orange chicken with thyme

Ingredients for 2 servings:

  • 500 g chicken breast fillet(s)
  • 2 oranges
  • 10 sprigs of thyme
  • 2 tbsp oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • Pepper (coarsely ground)
  • Salt
  • butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, wash the chicken breast fillet and pat it dry. Then, make several crosswise cuts on one side. Lightly sear it on both sides in a pan with a little butter. While searing, mix the oil, honey, and soy sauce in a bowl. Add the thyme leaves and pepper and salt to taste. Brush the breast fillets thickly with the marinade on both sides, place them in a greased baking dish, and pre-cook in the oven at 100°C for about 10 minutes. Meanwhile, peel the oranges and cut them into individual fillets. Once pre-cooked, place the orange fillets on top of the breast fillets and return the whole thing to the oven at 200°C for another 10-15 minutes (depending on the thickness of the meat). Garnish the orange chicken with a few sprigs of thyme. Asian noodles (e.g. mie or rice noodles) and rice go well with this, perhaps accompanied by an orange sauce.
