Orange compote on Icelandic cream cheese

Ingredients for 2 servings:

  • Flour for the baking sheet
  • 1 large orange(s)
  • 2 tbsp cranberries, dried
  • 2 tbsp orange juice, from cutting the oranges or additional if necessary
  • 500 g Skyr
  • 4 tbsp orange juice
  • 2 tbsp vanilla sugar or an amount to taste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Peel and finely slice the orange, reserving the juice. Combine the orange segments with the reserved juice, any extra juice, and the cranberries in the microwave or on the stovetop to make a compote. Cooking time: approximately 3-5 minutes, depending on how firm you want it to be. Season the compote with vanilla sugar and let it cool. Meanwhile, mix the Icelandic cream cheese with the orange juice and vanilla sugar until creamy, season to taste, and pour into glasses. Pour the compote over the top and serve.
