Orange Crispy Bites

The perfect orange crispy bites recipe with a picture and simple step-by-step instructions.

Dough:

  • 150 g Wheat flour type 405
  • 1 tsp Baking powder
  • 50 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 tsp Orange baking flavor
  • 50 g Soft butter
  • 3 tbsp Milk

Crunchy bonnet and filling:

  • 200 g Dark chocolate couverture
  • 75 g Butter
  • 1 tbsp Orange baking flavor
  • 1 Pck. Vanilla sugar
  • 75 g Natural cornflakes, slightly chopped
  • 80 g Leftover baked dough
  • 75 g Marzipan

Decoration:

  • 50 g White chocolate
  • 1 tsp Orange baking flavor

Dough:

  1. Preheat the oven to 180 ° O / bottom heat. Put all ingredients in a bowl and knead with the dough hook to a crumbly dough and then with your hands on the work surface to a smooth dough.
  2. Then immediately roll out the dough thinly on baking foil (the size of a tray) and cut out circles with a diameter of 5 cm at a short distance. When cutting out, turn the shape several times so that the circles are really well cut out and marked. In this way, the resulting dough remains can be baked at the same time and you only have to carefully break out the dough flakes afterwards. Then just pull the baking foil onto the tray and slide it into the oven on the 2nd rail from below. The baking time is only 10 minutes, a maximum of 12 minutes. You should not brown. Then take it out of the oven immediately, let it cool down a little, remove the platelets and place them on a mat. Put the baked dough leftovers in a plastic bag and roughly chop.

Hood and filling:

  1. Chop the couverture up a little and let it melt together with the butter over the water bath. Then refine with orange flavor and vanilla sugar and fold in the slightly crushed corn flakes and the crumbs of the leftover dough. Then let it cool down a little and solidify, this makes it easier to fill the biscuits. But not for too long, because the couverture should just no longer be liquid, but slightly sticky. So everything sticks together better.
  2. While turning the marzipan as many small balls with a diameter of approx. 8 mm as there are cookies. For me it was 32 pieces. Press this in the middle of each cookie and then cover with the crunchy bonnet mixture. Then let everything set well.
  3. Finally, as a decoration, melt the white chocolate over the water bath, mix with the orange flavor and draw small strips over the cookies. I still had candied oranges left and put a little bit on top.
  4. The little “bites” are ready ………… for the Pentecost coffee table ……………… or just like that. ……… ;-))
  5. The above-mentioned number of people relates to a serving of 32 pieces.
