Orange curd crepes

Ingredients for 5 servings:

  • butter
  • sugar, brown
  • 150 g flour
  • 50 g butter, melted
  • 2 eggs
  • 200 ml milk
  • 1 tbsp oil (sunflower oil)
  • 1 pinch of salt
  • some orange peel, grated
  • 250 g quark (20%)
  • 1 cup sour cream
  • 150 ml orange juice
  • 1 tsp, heaped orange peel, grated
  • some sugar
  • 1 tsp, heaped jam, (orange marmalade)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix the flour, butter, and egg until smooth. Add the milk and stir until no lumps remain. Stir in the oil, salt, and orange zest. Let the batter rest in the refrigerator for 2-3 hours. For the filling, mix all ingredients until smooth. Heat a little butter in a large pan until very hot. Fry a ladleful of batter into a thin crêpe. This batter will make about 5 crêpes. Let the crêpes cool, then spread with the quark cream and roll them up. Serve with brown sugar, if desired.
