Ingredients for 1 servings:

  • 3 oranges
  • 3 eggs
  • 100 g sugar
  • ½ tsp vanilla sugar
  • 40 g butter
  • 6 slices of sandwich toast
  • 12 butter biscuits
  • 100 g wild berries, frozen

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 40 minutes

To make the orange curd, it’s best to mix the juice of 2 oranges, the eggs, the sugar, and the vanilla sugar in a saucepan the day before and simmer gently for about 10 minutes while stirring, until the mixture thickens a little. Remove the pan from the heat and stir in the butter. Transfer the cream to a bowl, cool in a cold water bath, and then refrigerate. Spread about half of the cooled orange curd on 3 slices of toast and top with the remaining slices. Cut the sandwiches into slices the size of a butter biscuit. 4 biscuits should fit on 1 sandwich. Spread the resulting slices with the remaining orange curd, reserving a few teaspoons for decoration. Squeeze the last orange, dip the butter biscuits briefly in the juice, and press it onto the slices. Purée the berries with a hand blender. Decorate the slices with the berry purée and the remaining orange curd using a teaspoon.
