Orange-glazed Brazil nut confectionery

Ingredients for 1 servings:

  • 300 g sugar
  • 60 ml orange juice
  • 1 tsp orange zest, fresh
  • 60 ml water
  • 200 g Brazil nuts

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Combine the sugar, orange juice and zest, and water in a heavy-bottomed saucepan. Cook over low heat, stirring constantly, until the sugar has dissolved. Continue cooking the sugar solution over low heat until it reaches a temperature of between 118 and 120 degrees Celsius (235 and 240 degrees Fahrenheit) (a candy thermometer is helpful for this). Remove the pan from the heat and stir in the nuts. Stir until the mixture is creamy. Turn the mixture out onto a sheet of baking paper, spread it out using two forks, and let it cool. Note: A cooking time has not been specified because stovetop temperatures vary and a time specification could therefore cause confusion.
