Orange-Saffron Halava

Ingredients for 6 servings:

  • ¾ liter of water
  • 200 g cane sugar
  • 15 saffron threads
  • 1 handful of raisins
  • 100 g butter
  • 220 g semolina (wheat)
  • 2 apples or other fruit, peeled and sliced
  • 1 handful of nuts, finely chopped
  • Oil (orange oil), or the peel and juice of 2-3 organic oranges

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Melt the butter in a saucepan over medium heat, add the semolina, and roast for 10-15 minutes (stirring constantly!) until golden brown. Meanwhile, bring the apples and raisins to a boil in a saucepan with the water and simmer for about 5 minutes, then add the nuts, orange oil, and saffron. Add the semolina mixture and sugar to the apple mixture and mix well. Serve lukewarm or form the cooled mixture into balls and roll them in coconut.
