Ingredients for 1 servings:
- 80 g butter or margarine (Alsan)
- 250 g yogurt, sheep’s milk yogurt or vegan yogurt
- 80 g sugar, brown or raw cane sugar
- 1 pinch of sea salt
- vanilla sugar
- 1 tbsp flavoring (orange sugar), heaped
- 200 g spelt wholemeal semolina, very finely ground
- 1 tsp cream of tartar baking powder, optional
- 1 tbsp orange peel, slightly heaped
- 2 eggs, separated
- 50 ml water
- 80 ml orange juice, if you like with the pulp of 1 orange
- 80 g sugar, brown or raw cane sugar
- 1 tsp orange blossom water, to taste
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour
Soaked, simple, small sheet cake, 23 x 29 cm, optionally with orange blossom water, vegan possible
Melt the butter and let it cool slightly. Stir in the yogurt, raw cane sugar, sea salt and vanilla (sugar). Mix the spelt semolina with the orange zest and cream of tartar baking powder. Separate the eggs and beat the egg whites until stiff. Stir the egg yolks into the yogurt mixture and add the semolina. If necessary, add up to 50 ml of water or mineral water if the dough mixture seems a bit stiff. It should be a soft, creamy dough. Finally, fold in the stiffly beaten egg whites. This amount of batter is sufficient for a 23 x 29 cm tin with a depth of 4 cm, i.e. a small sheet cake tin. Grease the tin or line it with baking paper. Bake the cake at 180 degrees Celsius for approx. 35 minutes. Do the skewer test. For the syrup, boil the orange juice with the raw cane sugar and flavor with 1 teaspoon of orange blossom water if desired. It also looks nice if 50 g of raw cane sugar and 30 g of homemade orange sugar with zest are added. Pierce holes in the baked cake with a wooden skewer, pour the syrup on top, a tablespoon at a time, and spread evenly. Let it absorb. The cake can be eaten plain, with cream, custard, or fruit puree. Depending on the size, you can make 6-8 slices from the small sheet cake. For a larger, deeper baking sheet, double the quantity. (29 x 40 cm, 4 cm deep)
