Orange-Tarragon Mustard

Ingredients for 1 servings:

  • 2 orange(s), untreated
  • 250 g bell pepper(s), yellow
  • 200 ml vinegar (wine vinegar)
  • 2 tsp salt
  • 1 tbsp tarragon, chopped fresh
  • some whiskey
  • 50 g mustard seeds

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Grate the orange peel and juice the oranges. Bring the juice and orange peel to a boil, then let it cool slightly. Let the mustard seeds steep in the water, then finely grind about half of the mustard seeds in a spice grinder or coffee grinder. Mix the mustard seeds, mustard paste, vinegar, and salt thoroughly, stir in the chopped tarragon, and pour into sterile jars. Cover the mustard with a round piece of wax paper dipped in whiskey. Then seal the jars.
