Ingredients for 1 servings:

  • 200 g flour
  • 75 g sugar
  • 100 g butter, cold
  • 5 eggs
  • 2 orange(s), untreated
  • 1 lime(s), the juice
  • 1 tbsp marmalade (orange marmalade), bitter
  • 150 g powdered sugar
  • 1 pack of pudding powder (cream pudding powder)
  • 150 g cream
  • Powdered sugar, for dusting
  • Fat, for the shape

Working time approx. 40 minutes; Cooking/baking time approx. 52 minutes; Total time approx. 1 hour 32 minutes

French orange tart

Preheat the oven to 200°C (180°C fan-assisted oven). Sift the flour into a bowl. Quickly knead with the sugar, butter flakes, and one egg to form a smooth dough. Roll out on a floured surface and place in a greased baking dish. Prick the dough several times with a fork. Bake on the middle rack for 12 minutes. For the topping, wash the oranges in hot water, pat dry, and finely grate the zest. Squeeze the oranges and lime. Mix the juice with the marmalade and orange zest. Beat the remaining eggs, powdered sugar, and custard powder until frothy. Gradually stir in the orange mixture. Whip the cream until stiff peaks and fold in. Pour the orange cream over the dough. Bake in the oven at 150°C (center oven, 130°C fan-assisted oven) for about 40 minutes, until the cream is firm. Allow to cool completely in the dish, then dust with powdered sugar.
