Orange-walnut cookies

Ingredients for 1 servings:

  • 200 g butter, soft
  • 100 g sugar
  • 250 g flour
  • 1 orange(s), the juice
  • 3 tbsp sugar, slightly heaped
  • 60 g walnuts, chopped
  • 1 tsp cinnamon

Squeeze the orange and reduce the juice with 3 heaped tablespoons of sugar to a syrup. Allow to cool. Cream the softened butter and sugar in a bowl until light and fluffy. Stir in 2 tablespoons of the orange syrup and the flour. Mix everything until all the ingredients are well combined. Knead with your hands until a firm dough forms. For the filling, mix the walnuts, cinnamon, and the remaining orange syrup. Roll a heaped teaspoon of dough into a ball and make a well in the center with your thumb. Add 1 teaspoon of the filling. Grease a baking tray, line it with parchment paper, and grease it as well. Place the cookies on the baking tray and gently flatten them slightly. Bake in a preheated oven at 160°C for 15-20 minutes (until golden brown).
