Orecchiette with arugula

Ingredients for 2 servings:

  • 250 g pasta (orecchiette)
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 3 tbsp olive oil
  • 1 can tomato(s), chopped, 400 g
  • 50 g ham, raw
  • 80 g arugula
  • Salt
  • Pepper, from the mill
  • 30 g Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Ear pasta with tomato sauce and arugula

Cook the pasta in salted water according to the package instructions. Trim and wash the arugula. Finely chop the onion and garlic, sauté in olive oil in a large pan, add the tomatoes, and season with salt and pepper. Simmer for about 10 minutes. Cut the ham into strips and add after 5 minutes. Drain the pasta and mix into the sauce. Finally, stir in the arugula, grind pepper, and serve immediately. Sprinkle with Parmesan cheese. This recipe is a modified version of the Italian recipe “Orecchiette con la rucola.”
