Pineapple curry

Ingredients for 2 servings:

  • 1 can pineapple, 450 g, pieces
  • 1 tsp cardamom powder
  • 1 tsp coriander powder
  • ½ tsp caraway powder
  • 1 tsp. clove powder
  • 2 onions, roughly chopped
  • 2 tsp ginger root, finely chopped
  • 1 tsp sambal oelek

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat oil in a pan and fry the onion, ginger, and all the powders over low heat for about 3 minutes. Add the pineapple chunks and sambal, along with a little water if needed, and simmer for about 10 minutes. It can be served hot or cold with rice or flatbread. This recipe also works well in a buffet setting.
