Oriental gnocchi pan with dates and olives

Ingredients for 1 servings:

  • 180 g gnocchi
  • 1 tbsp dried tomato oil
  • 3 tomatoes, dried, marinated in sunflower oil
  • 3 dates, dried, pitted
  • 7 olives, pitted
  • 6 cocktail tomatoes
  • Pinch(s) of salt (or Mediterranean seasoning salt)
  • pinch(s) of pepper
  • some rosemary
  • some oregano

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Halve the dates and sun-dried tomatoes lengthwise, then cut them into strips crosswise. Slice the olives into rings. Heat the sun-dried tomato oil and fry the gnocchi in it. Meanwhile, halve the cherry tomatoes. When the gnocchi are golden brown, add the dates, olives, sun-dried tomatoes, and seasoning. Sauté for about a minute, then add the cherry tomatoes. Sauté just until the tomatoes are hot, about 2 minutes.
