Oriental Pasta in Hummus Sauce & King Prawns
The perfect oriental pasta in hummus sauce & king prawns recipe with a picture and simple step-by-step instructions.
for the hummus sauce
- 3 piece Spring onion
- 1 small Onion red
- 1 toe Garlic
- 1 small Red chilli
- 1 tablespoon Clarified butter
- 2 teaspoon Honey liquid
- 100 ml Cream
- 50 g Creme fraiche Cheese
- 7 piece Cardamom pods
- 7 piece Salt and lemon pepper
- 1 teaspoon Purple curry
- 150 g Humus with lemongrass
for the king prawns
- 20 piece Frozen king prawns
- 1 tablespoon Clarified butter
- 1 tablespoon Salt and lemon pepper
- 1 tablespoon Vegetable broth powder
- 100 ml Sparkling wine
- 100 ml Finely chopped parsley
for the pasta
- Spaghetti
furthermore …
- 1 packet Lamb’S lettuce fresh
- 1 packet Marinade for the salad
- 1 packet Sesame seeds to sprinkle
general preparations
- GIANT PRAWNS: thaw, rinse and pat dry with kitchen roll – finely chop parsley – HUMMUSSAUCE: cut onion, garlic and chilli into rolls or small cubes FItbspD SALAD: wash and spin dry – prepare marinade – SPAGHETTI: bring pasta water to the boil in good time
King prawns
- Sear the king prawns in clarified butter – deglaze with sparkling wine – season with salt, lemon pepper and some vegetable stock powder and let simmer for 5 minutes – then sprinkle with parsley, cover and keep warm while we prepare the sauce
Hummus sauce
- Sweat the onion, garlic and chilli together in clarified butter – caramelize with a little honey – pour in the cream and bring to a simmer – now add the creme fraiche and stir well
- Add cardamom capsules – season with salt and lemon pepper as well as red curry – stir in the hummus cream (I had bought ready-made ones with lemongrass) and let everything simmer again (if the sauce is too thick, dilute with milk or cream accordingly)
spaghetti
- cook the spaghetti according to the cooking instructions – then pour off the water and add the spaghetti to the hummus sauce – mix well
serve and decorate
- mix the lettuce with the marinade and spread on the preheated plates – turn the spaghetti into small noodle nests and place them on the plates – add the king prawns and finally sprinkle everything with sesame seeds
