Oriental potato ragout with dates

Ingredients for 4 servings:

  • 600 g potatoes, waxy
  • 2 onions
  • ½ bell pepper(s), red
  • 1 red chili pepper(s)
  • 3 tbsp olive oil
  • 2 tbsp bacon cubes
  • 1 tsp spice mix for couscous
  • 8 dates
  • 8 mint leaves
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the potatoes and cut into 1.5 cm cubes. Peel and quarter the onions. Trim and dice the bell pepper. Finely slice the chili pepper. Heat olive oil in a large pan and fry the diced potatoes for 2 minutes. Add the onions and fry for another 2 minutes. Then add the bacon, diced bell pepper, and chili pepper. Season with the couscous seasoning and cook, covered, over low heat until the potatoes are tender. Chop the dates and mint and stir in. Season to taste with salt and pepper.
