Oriental tomato sauce

Ingredients for 1 servings:

  • 600 g tomatoes, pureed
  • 2 garlic cloves
  • 200 g shallot(s)
  • 2 bay leaves
  • 1 stalk(s) cinnamon
  • salt and pepper
  • 150 ml oil
  • 1 tbsp lemon juice
  • some sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the passata in a saucepan, add 100 ml of water, and bring the sauce to a boil. Peel the garlic and shallots. Finely slice the shallots and the garlic. Add both to the tomatoes along with the bay leaves and cinnamon stick. Season with salt and pepper and stir in 100 ml of oil. Simmer for about 30 minutes. Discard the bay leaves and cinnamon stick. Add the remaining oil and season the sauce with lemon juice and sugar. While still hot, pour into jars and seal. Tip: The sauce will keep for about a week and also makes a lovely gift from the kitchen!
