Ingredients for 1 servings:

  • 270 g water
  • 5 g yeast
  • ½ tsp brown sugar
  • 110 g rye flour type 1150
  • 130 g wheat flour type 1050
  • 160 g wheat flour type 550
  • 1 tsp salt
  • 1 tbsp sesame seeds
  • 1 tbsp flaxseed
  • 1 tsp sourdough powder, optional

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 55 minutes; Total time approx. 2 hours 15 minutes

Prepare in Thermomix or food processor.

Preparation with the Thermomix: Place water, yeast, and sugar in the mixing bowl and dissolve for 2 minutes at 37°C on speed 2. Add the remaining ingredients and knead for 3 minutes on speed 2. Transfer to a greased and floured glass bowl and cover and let rise at room temperature for about 1 hour. Sprinkle a little flour on the baking mat and place the dough on it, folding the dough several times. Lightly grease and flour the small magic master (or similar baking pan), place the bread in it, moisten the surface, score it, and flour it. Place the lid closed in a cold oven and bake at 230°C (top/bottom heat) for about 60 minutes, then remove the lid and bake for another 5 minutes. Remove the bread from the pan and let cool briefly. Preparation with a food processor: Place all ingredients in the food processor and knead for 5 minutes. Cover and let rise in a warm place for about 1.5 hours. Continue as above.
