Ingredients for 1 servings:

  • 5 carrots, possibly more
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tsp butter or better coconut oil
  • ½ tsp orange zest
  • 2 tbsp orange juice
  • some ginger
  • n. B. Pepper from the mill

Working time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 45 minutes

simple, quick and simply brilliant – or brilliantly simple?

Preheat the oven to 200°C (top/bottom heat). Clean the carrots and halve or quarter them lengthwise, depending on their size. The pieces should be about the size of your fingers, no more than thick. Grease a baking dish, layer the carrots, and season each layer generously with sugar and salt, along with other spices to taste. Add the orange zest and juice, and cover with aluminum foil. It’s best to use a dish that has as few carrot layers as possible. Bake in the oven at 200°C (without fan) for 40 minutes. At the same time, you can easily add a potato gratin—it takes the same cooking time. I’ve entered the recipe for one person, but I usually make it for four. You can simply increase the ingredients.
