Oven-baked chicken breast fillet with thyme

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 10 thyme sprigs
  • ½ lemon(s), untreated
  • 2 tsp long pepper, alternatively black pepper
  • 2 tsp salt, coarse
  • some olive oil

Instructions

Working time approx. 14 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 9 minutes

juicy and aromatic

Clean and wash the chicken breasts and pat them dry. Wash the lemon and grate half of the zest. Then cut the lemon into thin slices. Crush the pepper and salt in a mortar and pestle. Wash the thyme, spin it dry, and chop it roughly. Mix the pepper, salt, lemon zest, and thyme well. Grease a baking dish with olive oil and arrange the lemon slices on the bottom. Rub the chicken breasts thoroughly with the spice mixture and place them in the baking dish. Let it rest in the refrigerator for about 20 minutes. In the meantime, preheat the oven to 160°C (fan oven). Roast the chicken breasts on the middle rack of the oven for about 25 to 35 minutes, depending on their size and thickness. The meat should still be juicy, so check and test it frequently.
