Ingredients for 2 servings:
- 4 chicken thighs
- 2 onions
- 1 bell pepper(s), red
- 1 cup sour cream, approx. 200 g
- 500 ml tomatoes, pureed
- 5 tbsp olive oil
- salt and pepper
- Thyme
- oregano
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Pat the chicken thighs dry, season with salt, and sear them on all sides in an ovenproof pan with olive oil. Then remove the thighs and sauté the diced onions and diced bell peppers in the same oil. Season, add the passata and sour cream, stir everything together, and bring to a boil. Then add the thighs, skin-side up, pour a little of the sauce over them, and roast everything in the oven for about 30-40 minutes. Serve with baguette, pasta, or rice.
