Maultaschen and vegetable pan

Ingredients for 2 servings:

  • 6 Maultasche(n), any filling
  • 1 carrot(s)
  • 1 m.-sized onion(s)
  • 125 g cherry tomatoes
  • 60 g bacon cubes
  • 2 m.-sized eggs
  • 2 tbsp milk
  • salt and pepper
  • some parsley
  • Butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the carrot, slice diagonally, and boil in salted water for about 4 minutes. Drain the carrots and let them drain. Cut the Maultaschen into strips. Peel the onion and slice into thin rings. Wash the cherry tomatoes, quarter them, and remove the stems if necessary. Heat the butter in a pan and fry the onion and bacon. Add the Maultaschen and carrots and fry for about 7-10 minutes. Add the cherry tomatoes and continue frying. Whisk the eggs and milk in a bowl and season with salt and pepper. Pour the mixture over the Maultaschen and let it set. Finely chop the parsley and sprinkle over the top.
