Oven-baked vegetables with salmon

Ingredients for 3 servings:

  • 3 salmon fillets, 200 g each
  • 3 carrots
  • 1 zucchini
  • 2 bell peppers, red
  • 400 g mushrooms
  • 10 cherry tomatoes
  • 1 large onion(s)
  • 5 garlic cloves
  • 150 g feta cheese
  • salt and pepper
  • Paprika powder
  • olive oil
  • 1 organic lemon(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Slice the carrots and zucchini, and wedge the onion. Halve or quarter the mushrooms depending on their size. Halve the cherry tomatoes. Dice the feta cheese. Slice the lemon. Place the vegetables in a large bowl, toss, and season with salt, pepper, and garlic. Spread everything on an oiled baking sheet. Arrange the feta cubes on top and place the salmon fillets on top. Place the lemon slices on top of the fish fillets. Drizzle olive oil over everything. Bake in an oven preheated to 180°C (top/bottom heat) for about 30 minutes.
