Oven Berliner

The perfect oven berliner recipe with a picture and simple step-by-step instructions.

For filling

  • 150 ml Lukewarm milk
  • 0,5 cube Yeast
  • 5 tablespoon Sugar
  • 2 tablespoon Melted butter
  • 1 good pinch Salt
  • 1 Egg
  • Any jam
  • A syringe or piping bag with a narrow nozzle
  • To sprinkle with sugar
  • Melted butter for brushing
  1. Heat the milk, stir in the yeast and sugar until the yeast has dissolved.
  1. Mix the flour, salt and egg, add the milk mass and knead everything (preferably in a food processor) until a lump forms, then do not knead the 2 tablespoons to the end. Add butter and knead for another 10 minutes until smooth, if dough is formed. The butter should be completely kneaded. The dough is a little shiny
  1. Now divide the dough into 7 pieces of the same order, I always weighed 100 grams, to form balls. Place on the baking sheet. Set the oven to 35 degrees. Slide in the tray on the middle rail. Let rise for 40 minutes. Now heat the oven to 180 degrees (upper-lower heat), DO NOT take the donuts out of the oven, otherwise they will collapse. Then bake for 15-20 minutes (depending on the oven). Allow to cool slightly. Fill with jam, in every Berliner should 1 teaspoon. Melt his butter, apply jam with a brush and roll in sugar. If you like, you can also dust with powdered sugar
