Salsify Vegetables with Boiled Potatoes and Mini Meatballs.

  • 2 Glasses Drained salsify preserve
  • 1 tablespoon Oil
  • 1 tablespoon Flour
  • 50 g Diced pork belly
  • 0,5 teaspoon Freshly grated nutmeg
  • Salt and pepper
  • 400 g Mixed minced meat
  • 1 Chopped onion
  • 1 tablespoon Breadcrumbs
  • 1 Egg
  • 300 g Potato freshly peeled
  1. Drain the salsify. Heat the oil with the bacon, add the flour and create a classic roux. Grate the nutmeg and let it simmer briefly.
  2. Season to taste with salt and pepper. Knead the mince, egg, diced onion and breadcrumbs to form a dough. Cut off small balls with a teaspoon and fry in very little fat, turn several times. I serve boiled potatoes with it.
