Oven – Herbs – Potato

Ingredients for 4 servings:

  • 1 kg potatoes
  • lots of herbs, fresh or frozen
  • n. B. Oil
  • 3 cloves garlic
  • chili flakes
  • nutmeg
  • salt and pepper
  • possibly paprika powder

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Peel the potatoes and cut into equal-sized pieces. Chop the herbs, finely chop or press the garlic, and place them in a baking dish with the potatoes. Season with salt, pepper, nutmeg, and chili. Drizzle with a little oil. Mix everything well and place in the oven at 200°C. The oven time depends on the size of the potato pieces; approx. 45–60 minutes. Stir occasionally to prevent the pieces from becoming too dry. The herbs you use depend on what you have on hand and what you like. I like to use a frozen Italian herb mix. You can never have enough herbs. You can also add paprika to taste and adjust the amount of garlic and chili to your own liking, depending on whether you like it or not. Roasted onions also go well with the potatoes. I sometimes serve the potatoes as a side dish or as a main course with herb quark and a salad. The quantities depend, of course, on whether it’s just a side dish or a main course. You can also easily combine root vegetables with the potatoes; simply cut them into pieces (the same size as the potatoes) and mix them together.
