This British cooking method guarantees super crispy and delicious fries even without a deep fryer. However, that doesn’t necessarily mean it’s less greasy or healthier than deep-frying. Cut the potatoes into strips that are as evenly sized as possible, about the width of your thumb (definitely no smaller than 1 cm x 1 cm). Preheat the oven to 230°C (top/bottom heat). Place the potato strips in a deep frying pan or large pot and fill with enough water to submerge all the fries. Bring the water to a boil and cook the fries until they are pliable and almost break when bent (approx. 8-10 minutes). Then, using a lid, carefully drain the water and just as carefully transfer the fries to an ovenproof roasting pan or baking dish. Leave enough space so that all the fries are next to each other and not on top of each other. In the baking dish, pour plenty of olive oil over the fries. They don’t have to be swimming in the oil, but they should definitely be coated with some oil on all sides. Place the baking dish in the preheated oven. Remove from the oven for the first time after 45 minutes, shake gently, and turn over. If the fries look a bit dry, feel free to add a little more olive oil. Then return to the oven for another 45 minutes, or until they’ve reached the desired degree of browning, which will, of course, vary depending on your taste and oven. Remove the fries from the oven and empty them into a bowl lined with a kitchen towel. Remove the towel after a few seconds; it’s just to catch the oil. Season to taste. Shake the fries well to ensure they’re all evenly seasoned and serve. Tip: I always find a little grated Parmesan and a sprinkling of rosemary delicious. But if you want a more classic fries flavor, just salt will do. Note: This sounds like a very long time for fries. But you have to remember that most of that time is pure baking time, which is a great time to prepare the main course to go with the fries.
