Oven pancakes with mascarpone and curd filling

Ingredients for 1 servings:

  • 2 eggs
  • 400 ml milk
  • 160 g flour
  • 45 g sugar
  • 2 pinches of salt
  • 3 tbsp oil
  • 125 g quark
  • 150 g mascarpone
  • 1 pack of cream stiffener
  • 30 g powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

For the batter, combine eggs, milk, flour, sugar, salt, and oil. Then place on a baking sheet lined with baking paper and smooth the surface. Bake in an oven preheated to 200°C (top/bottom heat) for about 20 minutes on the middle rack. Then let it cool until lukewarm. For the filling, combine the quark, mascarpone, cream stabilizer, and powdered sugar until stiff. Once the pancake has cooled, spread the cream over it and roll it up. If you like, you can also add some jam to the filling.
