Paella with Chicken, Fish, Mussels, Prawns & Chorizo
The perfect paella with chicken, fish, mussels, prawns & chorizo recipe with a picture and simple step-by-step instructions.
- 700 g Boneless Chicken Legs
- 700 g Seasoned salt from my KB
- 700 g Garlic pepper from my KB
- 700 g Curry
- 700 g Sweet paprika powder
- 700 g Mace
- 4 small Onions
- 300 g Chorizo sausage
- Rapeseed oil
- 2 Fresh peppers
- 400 g Tomatoes
- 400 ml Vegetable broth
- 600 ml White wine dry
- Juice 1 lemon
- 1 tsp Saffron threads
- 200 g Frozen peas
- 2 Garlic cloves
- 700 g Paella rice
- 300 g Pollack fillet
- 300 g Prawns with shell
- 400 g Mussels with shell
- White wine dry
- Water
- 1 Bay leaf
- 1 Lemon fresh
- Cut the chicken into large pieces and season with seasoned salt, garip pepper, paprika powder, curry and mace. Peel the onions and garlic, cut the onions into wedges and grate the garlic finely.
- Cut the chorizo into pieces, clean and wash the peppers and roughly cut into pieces. Wash tomatoes, cut in half, quarter, remove stalk and dice.
- Mix the vegetable stock, white wine, lemon juice and saffron. Roughly dice the fish and at the same time bring the white wine to the boil with water and bay leaf, then add frozen mussels and cook for about 3-4 minutes until the shell rises! Sort out and dispose of mussels that are still to be used Then rinse the mussels with cold water! Put the rest aside!
- Put enough oil in the pan so that the pan is about 1/2 cm covered. Heat and fry the chicken pieces in it until crispy, then add onions and chorizo and fry briefly, then add peppers and tomatoes. Mix well! Then deglaze with vegetable stock mix, stir well again! Then add the peas and season very well with seasoning salt and garlic pepper !!!!!
- Then add rice, mix well and stop stirring !!!!!! Cook over medium heat for about 30-40 minutes! Wash the lemon on the side and cut into wedges
- After about 20 minutes, spread the shrimp, fish and mussels on the paella and cook! Then turn off the heat and let the paella steep for another 5 minutes! Garnish with lemon wedges! Serve!
