Pak Choi Sous Vide

Ingredients for 2 servings:

  • 2 pak choi
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 70 ml water
  • 1 tbsp honey
  • 3 cm ginger root
  • 2 dashes fish sauce

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Grate the ginger and caramelize it in a pot with hoisin sauce, honey, and fish sauce. Deglaze everything with the soy sauce and water. Then let the stock cool. Preheat a water bath to 85°C. Halve the bok choy lengthwise. Place the bok choy and the stock in a sous-vide-safe bag and vacuum seal. Cook the bok choy in the water for 20 minutes, then refresh in ice water or serve immediately.
